
Meatballs.
I’m not really a fan of them, to be honest. I’ve always had the store bought frozen nuggets of nasty, and wondered why people liked these fucking things so much. It’s a texture thing. Spongy, chewy gray wads that are generally covered in a sauce that makes them bearable. But they seem to be a party and holiday staple, so I was determined to find a way to make my own.
This recipe changed everything for me.
These meatballs come out so full of flavor, you can eat them alone. They have a nice texture that doesn’t scream over processed. I ate them for days and froze some for later. Still fucking awesome.
The hot-mess adventure-
I found making meatballs to be a lot like making cookies. I fucking hate baking. It’s messy, and there are so many rules and steps. Hard pass. BUT, unlike cookies, these meatballs weren’t so damn difficult, and I didn’t have to get out the flour. Like cookies, It is important to keep the drys and wets separate to prevent overmixing.
I found out the hard way (before a lot of research) that if you over handle the meat (has he ever said that?) the balls can lose shape. It’s a sad day for everyone involved. Handle the meat with care, Ok? No one wants droopy flat-sided balls.
It’s important for the consistency of your balls, that you pre mix the dry goods well…just like fucking baking. Everything has to get folded in…just like fucking baking. It made me nervous in the beginning, so I overmixed my meat at first. I realized that premixing calmed my belligerent anxiety about making sure everything was evenly spread throughout. CHILL THE FUCK OUT. I only did that after I sloshed my egg mixture all over the counter trying to get it into my mixture. Epic shit show.
Once I was over my own shit, I knew that from years of making peanut butter balls during the holidays, rolling was going to get sticky-icky. I pre sprayed my spoon with oil-perfect. But when I sprayed my hands it just got…gross. A coworker told me to try rolling them with wet hands. Saved my damn day! I had to run my hands under the faucet a few times throughout, but it made a huge difference.
Overall, minor hot-mess. Making these did not take long at all. Baking them only takes about 15 minutes a batch, depending on size. I highly suggest trying these out when you need a side for a party, or just want some damn good spaghetti and meatballs.
